Adrift by celebrity chef David Myers opens at MBS

    Adrift, the latest restaurant to open at Marina Bay Sands caught our attention. Not only is it helmed by celebrity chef David Myers, the dining concept is also said to cater specially to “dreamers and explorers”.

    What we know so far is that the restaurant is inspired by Myers’ vibrant travel experiences. Diners can expect modern style dining that combines Southeast Asian and Californian flavours. Some dishes featuring this East-meets-West flair includes Cod with Chilli Crab Sauce and Preserved Green Papaya Soup with Maine Lobster and sago.

    Apart from creations featuring cultural mish-mash, diners can also look forward to surprises in the form of unique combinations of ingredients such as King Crab Melt with Pimento Cheese and Caramel Popcorn with Togarashi. If the concept is well received here, perhaps Myers would also dream up a dish using durian as one of its ingredients?

    Previoulsy, Myers was the chef behind Hinoki & The Bird and Comme Ca in Los Angeles.

    To complement Adrift’s menu, the bar will also feature an East-meets-West approach. Mixologist Sam Ross, who has made his mark on the New York bar scene with Attaboy, has been roped in to be its consultant. We hear he is reinventing the famous ‘Singapore Sling’ using local market fruits.

    Adrift is open for bar and dinner services daily. Lunch at the restaurant is slated to start only in March.
