Peking duck is absolutely one of our favourite dishes to have at any time of the year. The crispy skin of the duck paired typically with scallions, cucumber and sweet bean sauce and wrapped in a crepe-like pancake offers a mouthful of sweet and savoury flavours. When we found out that Cassia, a Chinese fine dining restaurant at Capella Singapore, is doing a 5-course Peking duck set menu, our interest was piqued.
Called Oriental Duck Experience, the set is designed by Cassia’s Executive Chef Lee Hui Ngai to bring out the best of the poultry’s rich flavour, thin crispy skin and succulent meat. The meal starts off with a ‘combination platter’ featuring Peking duck, marinated duck with plum sauce and green mango duck. The second course is a lighter wanton soup with duck meat and celery before a more substantial course of pan-fried American duck breast with mashed potatoes sets in. You have the option of either braised Ee-Fu noodles with conpoy and sliced duck or fried rice with diced duck meat and olive vegetables before the final dessert course. We were expecting a duck inspired dessert, but instead, it turned out to be chilled fresh mango cream, sago and pomelo. Perhaps a duck flavoured ice-cream would be more apt for a complete duck experience.
The 5-course Peking duck menu is available from 1 to 31 May 2015 for $79++ per person. The Peking duck is also available for a la carte orders. Served tableside, you can order half the duck at $34++ or the whole duck at $68++.
