Since opening a few months ago, gin specialty bar, Copper, at Jiak Chuan Road has been attracting a steady stream of bar aficionados with its gin cocktails and futuristic ‘alchemist meets mad scientist’ décor that features crates and trunks accessorised with skulls, test tubes and beakers.
Copper prides itself for its gin cocktail varieties as well as self-infused gin concoctions with teas, spices and herbs. For those who don’t like the juniper-flavoured spirit, Copper also serves a variety of champagnes and spirits.
To add diversity to its bar that features a gin-laden menu, Copper is opening up a new dining section on the second floor of the same venue to offer a ‘modern omakase-styled’ experience. The new intimate section can house an additional 20 diners in the 600 square feet bar area on the lower floor. Called Copper Dining, the omakase-style dining floor is focused on offering quality meats like A5 Wagyu and pigeon.
There are 2 main menus; a 5-course Voyage ($128++) and a 8-course Discovery ($178++). Mains include gin-glazed A5 Japanese-grade Kagoshima Wagyu beef, Pigeon a la Francaise with cognac flambé served with turnips, sweet peas and smoked bacon. Both menus come with a glass of sparkling Prosecco.
There are 2 dinner services daily at Copper Dining, 7pm to 8.30pm and 9pm to 10.30pm. That’s an awfully short service for an omakase experience for diners to enjoy the meal and chill out.
Also, we think Copper might have used the concept ‘Omakase’ quite loosely. ‘Omakase’ typically means that there is no menu and the chef decides on what to serve during the service. Perhaps ‘Kaseki’ might have been a more appropriate term to use in this case?
Copper Bar is open from 6.00pm till 12 midnight, from Mondays to Wednesdays and serves its supper menu till 3.00am from Thursdays to Saturdays. For reservations, call 6222 5565 or email [email protected]
