    Newly opened Raven restaurant-bar at Chijmes, Singapore, is the latest F&B outlet by Urban City Hospitality Group, founded by Guy and Gordon MacGregor. Helmed by Head Chef, Sam Chablani, Raven serves up Northern and Southern American comfort food with an Asian flair that Chef Sam calls ‘The New Americas’ cuisine.

    Fancy cuisine name aside, the food at Raven is surprisingly down-to-earth. Here are some reasons to give the newly opened Raven a try:

    ‘All New Americans’ Food

    Influenced by his time in New York City, Chef Sam Chablani’s menu is a take on the many dishes he enjoyed while living in New York. Take for example his Steamed Little Neck Clams ($16). It was inspired by a similar dish served at the Momofuku restaurant in New York. From the Crispy Nori Wrapped Salmon served with ponzu sago to the Tuna Tartare served with avocado wasabi puree and frozen Nan Shui pear shavings, the dishes he designed are well-balanced, with good flavour profiles and texture.

    A dish worth mentioning is the Raven Burger ($22) ‘Cemita’. The juicy 180-gram ‘flame-kissed’ beef chuck patty was perfectly cooked to medium rare and finished with chipotle, avocado and chorizo cream and topped with red onions and corn chips. It makes for a very satisfying and messy burger that we would definitely go back for.

    All in all, the food at the Raven are reasonably good and we felt that the sauces are the real stars of some of the dishes. The sauces are outstanding and lift the overall taste of the food we ordered. However, the mind-blowing dish wasn’t the handmade beef ravioli ($24) or the fried chorizo croquettes ($13). It was the humble roasted corn niblets ($12)! Served with a simple smoked sour cream sauce that comprises of chili, paprika and cayenne, the perfectly charred corn pieces are bursting with sweet and smoky flavours. According to Chef Sam, the sweet corns are sourced from a supplier in Cameron Highlands in Malaysia. So, if there is one dish you must order, this is it.

    Let your mood decide where to sit

    Depending on who you are hanging out with and your mood that evening, Raven’s 3 different sections aim to cater to your different moods. Before entering the restaurant-bar, you are first greeted with an outdoor garden patio area. This area is good for large groups and animated conversations (by animated, we mean loud) while tucking into Raven’s small plates and draft beers. The bar area at the front of restaurant-bar Raven can sit a total of 24 guests and is a good for a quick drink after work.

    For a more intimate setting, ask to be seated at the one of Raven’s Argentinean leather booths. The flattering orange lights is great for a girls night out and a great place to bring your date.

    Happy Hour

    There is a good selection of craft beer, wine and spirits as well as signature cocktails that are prepared by the Group’s bartender, Ryan Rhodes. Signature cocktails include Cucumber Rickey, a refreshing botanical tipple with cucumber-infused Hendrick’s gin, Benedictine D.O.M, lime and tonic water and Agave Smash, a tart blend of tequila, Drambruie, agave and lemon.

    Raven runs a happy hour promotion of 1-for-1 draft beer from 5pm – 9pm daily and the whole of Sunday.
